Finca Tio Conejo is a lush and beautiful farm located outside of Manizales, in the Caldas Region of Colombia. The farm is 25 hectares, and sits at an elevation of 2,000 meters above sea level. Finca Tio Conejo has been growing coffee since 2010 and is owned and run by our friends Ivanov and Angela Castellanos.
Ivanov and Angela have strong commitments to regenerative agricultural practices on the farm. They have been able to re-forest their farm and create a biological network that supports more than 130 species of birds. This forest also connects multiple rivers to help provide livable habitat for foxes, ferrets, ocelots, raccoons, squirrels, and many other species. The forest also protects the farm from severe weather by preventing soil erosion during heavy rains and helping to retain soil moisture during dry periods which negates the need for irrigation.
Both of these lovely coffee varieties are processed in the dry/ natural process. The fruit is picked from the trees at maximum ripeness, then placed on raised screen beds to gently dry for 25-30 days. Once dry, the coffee is milled and sorted, then stored in sealed bags for reposo “rest” for the next 6-8 weeks.
These coffees are representative of our mission to find farms and mills focused on producing high quality coffee and to reward that hard work with substantial purchase price premiums. It is our belief that "the only truly sustainable coffee is good coffee. We aren't pushing toward either quality or impact; we are pushing toward both because they are the same thing."
