Los Santos is a lot selection from the Encantos de la Coyota comite, a group of 15 producers located in the El Triunfo and Buenos Aires hamlets of the San Jose de Alto district of Peru.

Our friends at Origin Coffee Lab have worked with this particular community for several years, completing the first steps of the Cafe Solidario program. This portion of the program focuses on agricultural methods to increase the viability and sustainability of coffee farms, beginning with basic coffee harvesting and post-harvest processing techniques. The results speak for themselves. Encantos de la Coyota comite members have massively improved the quality of their coffee, and in return are receiving higher premiums and price-bonuses. Additionally, comite producers have moved on to the next steps of the Cafe Solidario program, which include advanced agricultural techniques, land conservation, and financial management. It’s partnerships and structured programs like these that allow coffee producers to improve their quality of product and life on a lasting, sustainable trajectory.

In this coffee, you’ll find a mixture of dark fruit flavors, somewhere between blackberry and black plum, with softer tones of chocolate, caramel, and nuts that remind us of deliciously sweet nougat. On the back end, look for soft floral and apple flavors as well. This coffee is complex, yet remains delightfully balanced. We will be roasting to a medium profile to highlight sweetness and depth.
